I believe you will need to do that within your unattend.xml file.

ExtendOemPartition = 1 (extend to the end of the disk)

You might could be use the Pre-boot section and use diskpart in the RunOnce section. I'm not sure the parameters you would use though.

On a side not, I would recommend giving Provisioning a try if it's possible in your environment. It gives you alot of flexiblity with your deployment tasks.
