VMWare is a funny animal.  If you set your base OS as XP and then change VMWare to UEFI it becomes 32-bit UEFI.  On the flip side if you make it Win7 x64 (for example) you get 64-bit UEFI.

 

As for the versioning they are giving you the UEFI version (2.3.1), which is supposed to support the PXE 2.1 spec, so you should be pretty much good to go.  Can you check that your pxe rep has the boot_x64.wim file on it?  That would indicate that you are getting the right bits to the machine.  That would be a good place to start.
